Healthy Bites: Consider deli or packaged meat for casseroles

     1/4     teaspoon salt

     1/4     teaspoon pepper

Casserole:

     2    cups seasoned croutons

     3/4  cup shredded reduced-fat Cheddar cheese

     1/4  cup melted butter or Smart Balance

     1    8-ounce can asparagus tips and pieces, drained

     1    cup diced cooked ham

     2     tablespoons finely chopped onion

WHISK milk, flour, butter, salt and pepper in saucepan; cook and stir on medium heat until thickened and smooth; set aside.

COMBINE croutons, cheese and melted butter.

SPREAD half the crouton mixture in an 8-inch square or 11- by 7-inch baking dish; arrange asparagus, ham and onion evenly over croutons.

TOP with white sauce and remaining crouton mixture; bake uncovered at 350° about 20 minutes or until hot and bubbly and slightly browned on top.

Nutrition information:(1/6 recipe): 200 calories, 100 calories from fat, 11 grams fat, 3 grams saturated fat, 15 milligrams cholesterol, 920 milligrams sodium, 14 grams carbohydrates, 1 gram fiber, 12 grams protein.
