Mexican Shepherd's Pie
Makes 12 servings.
1 pound ground turkey
1 packet reduced-sodium chili seasoning
1 15-ounce can gold and white corn, undrained
1 14-ounce can petite diced tomatoes, undrained
2 16-ounce packages refrigerated mashed potatoes (recommended Bob Evans Original or Kroger store brand)
2 cups low-fat shredded cheddar or Mexican blend cheese
BROWN turkey, breaking up larger pieces; stir in chili seasoning, corn and tomatoes with their liquids.
BRING to boil; reduce heat to low and simmer 10 minutes; spoon into 13- by 9-inch baking dish.
PREPARE potatoes as package directs; spread over chili layer; sprinkle evenly with cheese.
BAKE at 350° about 25 to 30 minutes or hot and bubbly and cheese melted.
