Spicy and decadent reunion food

 1 10-ounce can RoTel tomatoes with green chilies, undrained

 1 14-ounce can chicken or vegetable broth

 2 cups instant brown or white rice

 1/4 teaspoon salt

Melt butter in saucepan; cook onion and garlic about 5 minutes on low, stirring occasionally. Stir in corn, tomatoes and broth; bring to boiling; stir in rice and salt. Cover and remove from heat. Let stand 5 minutes. Fluff with fork before serving.

Soul Food Seasoning

A general, all-purpose blend to liven any savory recipe. It is commercially bottled, but this is for making it up fresh or being able to adjust according to taste.

Makes 1/2 cup

2 tablespoons crushed red pepper flakes

2 tablespoons garlic salt

2 tablespoons onion powder

2 tablespoons chili powder

1 tablespoon paprika

1 teaspoon dried thyme, crushed

1 teaspoon black pepper

Mix and store in sealed container up to 3 months.
