I haven't tried, but I don't see why you couldn't also do either an egg-white omelet -- discarding the yolk and whisking the white with milk or water -- or one with liquid egg substitute. If you go with Eggbeaters, it's 1/4 cup to equal one whole egg, and don't whisk any other liquid into it.

Fresh Herb Wamelet

Makes 1 serving.

     1    egg

     1     tablespoon cream, milk or water

     Salt and pepper

     Fresh chopped herbs of your choice, such as parsley, chives, oregano, basil, dill

SPRAY waffle iron with nonstick cooking spray.

HEAT waffle iron.

WHISK egg, cream, salt and pepper to taste. Stir in herbs.

POUR over hot waffle iron sprayed with cooking spray and close lid. Stand by and watch closely because it only takes 2 to 3 minutes.

LIFT from maker, folding as you remove; serve immediately.

Note: You may add any favorite omelet filling you desire -- spinach, ham, bacon, sausage, cheese -- either in the egg mixture or sprinkled on half the wamelet just before it's done.

Nutrition information:Per 1 whole egg: 70 calories, 45 calories from fat, 5 grams fat, 1.5 grams saturated fat, 215 milligrams cholesterol, 65 milligrams sodium, 1 gram carbohydrates, zero grams fiber, 6 grams protein.
