Healthy Bites: Simple salmon recipe is a healthy choice

     2     tablespoons brown sugar

     2     tablespoons reduced-sodium soy sauce

     1     teaspoon grated orange zest

     1    6-ounce can unsweetened pineapple juice

     4    4-ounce salmon filets or one one-pound whole filet, rinsed, patted dry

     Salt-free lemon pepper

     Paprika

COMBINE sugar, soy, zest and pineapple juice in saucepan; bring to boil on high; immediately reduce to low and simmer until reduced to 1/4 cup (about 25 minutes, but watch after 20).

PLACE salmon on baking sheet; sprinkle with lemon pepper and paprika.

BAKE at 350° until just baked to desired doneness; spoon 1 tablespoon sauce over each piece; bake 1 minute longer to set topping.

Nutrition information:Per serving: 200 calories, 60 calories from fat, 7 grams fat, 1 gram saturated fat, 60 milligrams cholesterol, 320 milligrams sodium, 10 grams carbohydrates, zero grams fiber, 23 grams protein.
