The Kanawha-Charleston Health Department issues non-critical and critical violations. Critical violations are given to incidences that relate directly to the protection of the public from food-borne illness. The incidences are not negotiable and must be corrected immediately. Repetitions of critical violations may lead to enforcement actions or permit suspension. The following restaurants were rated, and the number of critical violations issued are included:
Dwight's of St. Albans, 513 MacCorkle Ave., St. Albans: 16 critical violations. Inspector's comments: Person in charge unable to demonstrate knowledge; food employee did not wash hands and change gloves after handling French toast batter, then switching to read-to-eat foods; employee observed not washing hands before putting on gloves; raw pork stored above cheese in prep cooler; fish stored above read-to-eat food in cooler; meat sauce in walk-in is at 45-degrees F after six hours; walk-in cooler above 41-degrees F, sour cream 44-degrees F, beans 44-degrees F; raw eggs in Black & Decker cooler being cold held at 61-degrees F; tarter sauce is improperly date marked; collider not clean to sight; ice machine is visibly soiled; white box fan in kitchen is visibly soiled; ceiling vents and cords over food prep area not clean to sight; can opener is visibly soiled; meat slicer is visibly soiled. Upon re-inspection on June 27, no critical violations were found.

Person in charge is unable to demonstrate knowledge; person in charge observed not using soap to wash hands; observed damaged bags of food (cornmeal) in kitchen; observed cross-contamination broken eggs stored above ready to eat lo mein in walk-in cooler; chicken in sheet pans on drain board stored with dirty utensils; crab rangoons was observed coming in contact with dirty container; raw chicken on stick, beef, chicken, etc., on counter being held at 57, 59, 53-degrees F; observed butter made in the facility on June 24, not date marked; mixer is visibly soiled; hood vents over food is visibly soiled; sheet pans have encrusted soil accumulations; food-contact surfaces of can opener have encrusted soil accumulations; ready-to-eat chips were stored in dirty containers; hot water tank for dish machine leaking onto floor; working containers of chemicals not labeled with contents.
Berry Hills Country Club, 1 Berry Hills Drive: 9 critical violations. Inspector's comments: Drinking cup without cover was observed in food preparation area; large bin of soup not cooled quickly; all sandwich meat 51-degrees F-49-degrees F, thrown away; foods in walk-in are improperly date-marked; mixer blade chipped -- metal piece hanging off blade; can opener blade is visibly soiled; filthy bar soda hose is touching ice used for drinks; slicer is visibly soiled; working containers of chemicals are not labeled with contents.
Bridge Road Bistro, 915 Bridge Road: 9 critical violations. Inspector's comments: Person in charge is unable to demonstrate knowledge and train employees on proper food safety practices; food employee observed improperly drying hands by wiping on apron; drinking cup without cover was observed in food preparation area; food in 2-door upright cooler 51-degrees F, thrown away; food in 2-door line cooler 54-degrees F, thrown away; gravy on seam table 101-degrees F, thrown away; PHF in walk-in is improperly date-marked; slicer is visibly soiled; utensils in hot water manual warewashing sanitizer sink are not in contact with hot water for the minimum amount of time to achieve proper sanitization. Upon reinspections on June 27 and 30, 1 critical violation was found respectively.

Inspector's comments: Drinking cup without cover was observed in food preparation area; garlic and oil 88-degrees F; crab in cooler 52-degress F, all food thrown away; sesame pork 122-degrees F; Teflon coating peeling off rice cooker, pot thrown away; slicer dirty, can opener is visibly soiled; hose in mop sink.

Inspector's comments: Drinking cup without cover was observed in food preparation area; employee handling food contact surface of plate bare handed; food-contact surfaces of Pepsi bar gun has encrusted soil; food-contact surfaces of ice machine have encrusted soil; food-contact surfaces of pans have encrusted soil accumulations; the mop sink located in the mop area does not have an air gap as required; grill cleaner in prep area is stored over or with hot sauce.
