MORGANTOWN, W.Va. -- It's almost deer season, so it's time to learn how to properly handle what the hunters bring home.
To help, the West Virginia University Extension Service is offering a special class: Venison 101.
It teaches best practices for food safety, from the time the deer is killed until the meat goes on the table.
WVU Extension designed the one-day class with help from the state Division of Natural Resources.
Participants will learn how to store and prepare venison. That includes canning the meat and making deer jerky.
They'll also learn how to identify unhealthy deer that aren't fit to eat.
Local Extension offices will offer the class. Dates and fees vary. The schedule is available online.
